The group was founded in 2009 by Paul Frederick and Justin Nedelman. The first
restaurant started in Redlands, California. It has expanded to 24 restaurants in
California, Washington, Idaho, Colorado, Nevada, and Texas, with plans to grow with additional locations in California in 2019.
Eureka! is defined as expressing delight on finding, discovering or solving something.
